Baked Oatmeal

This tasty breakfast treat is always a hit and oh, so easy!  I often make a double batch and keep the leftovers in the fridge -- they easily reheat for a quick breakfast.

Baked Oatmeal
Mix together in a 2 qt. baking dish:
1/2-3/4 c. sucanat (or brown sugar)
1 1/2 tsp. baking powder
1 tsp.cinnamon
1/4 tsp. sea salt
Add:
1/3 c. melted butter and mix well.
Add: 
2 eggs
1 1/2 tsp. vanilla and mix well.
Stir in 1 c. plus 2 Tbsp. milk.
Add 3 c. oatmeal and stir until well mixed.
Cover and place in the fridge overnight (you can skip this step is using quick-cook oatmeal).
Bake at 350 degrees for 35-45 minutes or until "set" in the middle.
Spoon into a bowl and add any topping you like -- honey, almonds, craisins, milk, chocolate chips, etc.
Enjoy!

This recipe can also be doubled and placed in a 9 x 13 pan -- bake for the same amount of time.

  1. How crazy, another thing we have in common. Not sure if we both got this recipe from Laura, but we've been enjoying this lately with black raspberries, honey and kefir. Very versatile and so yummy!
