We'll be traveling to Rochester this weekend for my dad's birthday/retirement party. With a four hour drive (each way) we'll need some healthy treats to take along. Here is what I came up with:
Chocolate Granola Bars
Melt 1/2 c. coconut oil in a large sauce pan.
Stir in 1 c. natural peanut butter.
Add: 1/4 c. cocoa powder
1/4 c. sucanat
1/2 tsp. salt
Add: 1 c. shredded coconut
1 c. raisins
2 c. oatmeal
Mix well. Press into greased 9x13 pan. Chill; Cut; Serve!
Store in the fridge for best results.
These should be a yummy treat for the road trip! And hopefully provide the extra energy needed to navigate the traffic through the Cities!
