What? Cookies healthy enough for breakfast?! Not quite, but almost! My sister-in-law dubbed these breakfast cookies one day and the name stuck. No one believes that they are actually fairly healthy. So, when I am in the mood for chocolate chip cookies, these are the ones I make!
Cream together in a large bowl:
1 c. natural peanut butter
1/2 c. unsweetened applesauce OR 1/2 c. coconut oil
1 1/2 c. sucanat
Add and mix well:
2 tsp vanilla
3 c. whole wheat flour
1/2 c. milled flax seed OR 1/2 c. whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
water if needed (depending on your peanut butter and whether or not you
used applesauce, you may need to add a bit of water at this point)
3 c. oatmeal
2-3 c. chocolate chips
Drop by the spoonful onto a cookie sheet or baking stone. Bake at 350 degrees for 10-12 minutes. Cool on wire rack. Makes about 8 dozen cookies.
I know, this makes TONS of cookies! I usually make half the cookies and freeze half the dough for another time -- less work the next time.
